So I've completed the DS-160 ready for my interview, and I've printed off the confirmation page, but do I have to pay for the DS-160 application at some point?

DS-160 doesn't have a fee but you'll need to pay for your applicable/specific visa fee. Visa application fee is paid before you go to your visa interview.

For my I-129F, K-1, AOS, EAD, AP and ROC detailed timelines, please refer to my timeline page :)

ROC filed on December 1, 2020, assigned to SRC, approved within 106 days on February 18, 2021.

My sincerest gratitude to all VJers, especially the late geowrian.

London has Step by step instructions. They explain when to pay the fee. https://uk.usembassy.gov/visas/fiancee-2/applying-for-the-visa/
