As a practical matter, the income requirement is the same for the K-1 BECAUSE the Consular Officer knows the I-864 is going to be required, and simply applies the 125% anyway when making their judgment call.  It's almost universally the actual policy for IV Units.

Assuming she got it, would her visa be in jeopardy if she doesn't stay in the U.S. for a fixed amount of time?

It would be impossible for me to know that. I think it would depend on how she was questioned and her exact answers. A denial itself will not cause any harm, but lying in a previous application is like a boomerang, it will come back.
