Only if they think it will help. So if it's a new job, for example, and they don't have much work history to show in their tax returns then it's useful to have a letter from the employer confirming the position and salary. Or if they recently had a promotion or a raise. But it's not necessary. Just the tax info suffices.

Timeline in brief:

Married: September 27, 2014

I-130 filed: February 5, 2016

NOA1: February 8, 2016 Nebraska

NOA2: July 21, 2016

Interview: December 6, 2016 London

POE: December 19, 2016 Las Vegas

N-400 filed: September 30, 2019

Interview: March 22, 2021 Seattle

Oath: March 22, 2021 COVID-style same-day oath

The petitioner is not including tax returns for the last 3 years because she was a full time student and not working.

She will include a statement for why she wasn't required to file taxes.

She only started working back in march of this year, so does she still require the work verification letter?

Doesnt matter.

As for the other part, again it doesn't matter. She can provide it or not. It won't make a difference unless you're trying to not use a joint sponsor.
