I am a woman applying to have my fiance' and his 2 minor children to move to the U.S. for us to marry. As far as sponsorship, will it be best for me to get a co-sponsor if:

I have 2 part-time jobs

I receive child support (not sure if that counts towards income)

I rent and do not own a home yet

I have approximately $66,000 in savings and IRA accounts

I have 2 minor children (I claim 1 on taxes, my ex-husband claims the other and both kids are under a 50/50 custody split agreement)

I'm not sure if this is enough to prove sponsorship. I'm confused on how much I need to have.

Your minor children are counted in your household size no matter where they live or who claims them on their taxes. So, your household size will be 6, you and your 2 kids, plus your fiance and his 2 kids.

If you make enough for a household size of 6(at least $40,725), then you are good. Makes no difference if the income comes from several different sources. Yes, child support counts. You just need to provide the court order and some bank statements to show the exact amount you receive each month.

If you do not meet the income requirement, then you can use assets at 3 times the amount you are short. Even though you use the I-134 for the K-1 visa, read through the I-864 form instructions. It has details about income, household size and using assets, and you will need the I-864 later for AOS after you are married. > https://www.uscis.gov/sites/default/files/files/form/i-864p.pdf

When you say I can use assets at 3 times the amount I am short, do you mean that if I am short by say $15,000, then if I can prove assets of $45,000, then we're ok without a co-sponsor?

Yes, but there is never a guarantee. The CO makes the sole decision on whether or not they believe the intending immigrants will become public charges or not.
