I finally got through to the NVC today and spoke to someone who gave me a case number and invoice number. I went onto the CEAC website to track our case, and the message said this:

U.S. Department of State
IMMIGRANT VISA APPLICATION
In Transit Your case is in transit to the Consular Section. Your interview date was provided to you by the National Visa Center.
I haven't received anything from NVC, nor has my fiance who lives in Calgary. The guy at the NVC seemed like he was in such a rush to get off the phone, but he said, "watch your email for the Welcome letter". I'm so confused.

That is a generic message aimed mostly at CR1/IR1 immigrant visas which do a lot of processing (forms, documents) at the NVC culminating with NVC assigning an interview date. It doesn't work like that for K1s. Your embassy will provide instructions once the case arrives there. Check your regional forum because each embassy has different procedures of what happens now and how you get an interview.
