I'm reviewing the AOS guideline about what forms are needed, but outside of 3 years tax returns, pay stubs, and an employment letter, what addition documents do I provide with the AOS package?

I only submitted past 3 years of IRS tax transcripts. Nothing else. Interview upcoming.

What you are describing are the documents for the I-864. There are other required documents for the AOS forms as well. See the guide > http://www.visajourney.com/content/k1k3aos

I'm aware of the passport photos, I-94, passport copy, NOA2, those things. But I wasn't sure if I needed to include more. I guess I was thrown off because I included so much into the K-1 that the AOS seems minimal in comparison. Is that basically right?

It is fairly minimal for the initial filing. The only proof of your marriage/relationship you need to include is a copy of your marriage certificate. What is listed in the guide is really all that is needed.
