On the stats page where it lists all kinds of averages is there no way to track the average number of cases being transferred? I've tried multiple search features and I just don't see this option anywhere?

Transfers are a tricky thing. There was a legitimate transfer of April and May I-129F cases from TSC to CSC, aside from that people often make the mistake of assuming the Texas Lockbox is the same thing as TSC, and when their cases get to CSC they put their case as "transferred" when it wasn't transferred but instead just forwarded. If there were a function to monitor transfers it would be highly inaccurate anyway.
