Since your marriage based GC is conditional, in the 90 day period before your GC expires you will be required to file I-751 jointly with your spouse to remove the conditions on your GC.

These two years will give you and your spouse time to prove the "bona fides" of your marriage by having joint accounts, property, taxes, children, benefits, etc. Basically anything that can prove you two are a legit couple and that you didn't marry for immigration purposes.

You submit the required paperwork, if you get approved, then you get a 10 yr GC.

Have a break from USCIS but start collecting stuff for ROC for 21 months time dont leave it then just provide evidence from 2 weeks prior, get a box or folder and start putting occasional stuff in there, bills in both names, bank statements every now and again and so on.

Can you travel out of the country and come back in while the I751 is being processed, and what is the average timeline?

My 2 year GC runs out in April 2015, but I am travelling to the UK in December 2014 and Mexico in March 2015. So when should I apply?

Yes. Right now, as of June 30 2014, the process takes 6 months with both the CSC and VSC.

There are calculators online that can tell you what date is exactly 90 days from your April 2015 expiry. Do your own work please, and read your form instructions.

When you file your I-751, you will receive an NOA that gives you a year's extension from your card's expiry.

It looks like you would be able to file at the earliest, some time in January 2015. As long as the GC itself is valid when you reenter the US, you wouldn't have problems. As mentioned the NOA should serve as proof of the extended validity. But they should give you a sticker on your GC that extends it for a year when you go for biometrics, make sure you ask if they don't automatically provide it.
