Timeline

If I left the USA and my husband started the divorce process, would I have to come back to sign the paperwork or he could send it to me? How long does it take in California?. We don´t either have kids or properties, and have been married for almost 3 years.

most states have a method of filing together that is much quicker and often do not even require a court hearing. If California has similar rules, which I believe they do, you could file together and leave as soon as its filed.

California requires 6 months and one day, from the time the divorce is filed with the court, to become final. One spouse files, the other acknowledges receipt of the filing. California is a no-fault state, so if one spouse tries to resist the divorce it slows things down, but that's all. You do not need to be in the US to sign anything. Court appearances can be waived.

Three year marriage, no kids, real property, seems simple. Read up (free resources) and you should be able to do it yourself. If both parties are in agreement and sign paperwork as soon as it's received, you can do this in six months, no problem.
