Always send copies unless the form instructions specifically ask for originals. Everything you send gets put into your file, and you won't get it returned to you! Copies of passport and birth certificate are all fine.

I only sent copies of my letters and evidence (itinerary, passport pages, engagement receipts, boarding passes) and sent in originals of the statement of our relationship and intent to marry. Hope that helps. I have made a file that I keep all the originals along with a copy of the entire package that I submitted.

I have gotten into the habit of putting all original documents in plastic page savers (ACCO), available at many stores. I have made good color laser copies of all of the originals. Submitted copies, when appropriate. At visa and AOS interviews, brought ALL of the original docs and copies, and any other evidence. The IO can examine the original, compare the copy to it, and keep the copy for their records as necessary. It has served us well thus far.
