Her choice. If she intends to change her name at the time of marriage, then fill out the I-485 using her married name and list the maiden name(s) as "other names used". It is not required and has absolutley NO affect on receiving a greeen card or not.

WHEN she gets her green card in her married name she can change her other documents also.

My wife did not change her name at the time of marriage or for the green card but she did when she became a US citizen.
