best to send two letters of intent -one from the petitioner-one from the beneficiary date and sign,and then again for the interview another updated intent to marry letter.-don't get mixed up between the letters how you met.and letter of intent and proof of relationship with evidence,

We sent one each. Don't forget to send the original copies with original signatures (using blue ink instead of black might show them more easily it's an original and not a photocopy).

To be sure, I'd send a new copy of the one you've already sent so you're 100% sure they've got everything.
