I am getting all proof of our relationship together and all the other stuff, plane tickets, Skype, phone bills, photos, etc

Do I need my tax returns for the last two or three years?

Letter from my employer?

bank statements or a letter from the bank?

If I might be missing something let me know Thank you for your help Jimmy

I guess you're doing the K1? Initially, the only proof of relationship you need is that you have met, in person, within the last 2 years. The other stuff is not needed for several months. Passport stamps and boarding passes are the best primary evidence, and if you want, a few dated pictures of the two of you, and maybe store receipts from buying things in each other's cities or something like that as secondary evidence.

You don't need tax returns or any letter from your employer until after your petition is approved. As for the evidence those are all good things. We included pictures from each visit, passport stamps (photocopies) from each visit, boarding passes (photocopies), & a couple credit card statements from each one of us showing we were in the same place at the same time. I didn't send any skype or phone bills, as it only asks for proof you MET in the last 2 years. Although a lot of people do 'front load' the petition, which is a good idea, depending on where the country is your fiance is from :) Like was suggested, you should read the guide for the K1 visa..it will tell you everything you need to do.
