I have an interview this Thursday for my adjustment of status, and I have everything I need for it except for my husband (petitioner)'s birth certificate. I can't find it anywhere and suspect we might have sent the original with the original application accidentally. We have a photocopy but I'm sure that they want the original.

What I want to know is, will my application be denied outright or will they just send me back and request that I send in the birth certificate? From some googling I've seen people say that you just have to send it in later, but I don't know how current that information is and I'm pretty worried.

If you sent the original, then they should already have it in your file. You can let them know that. You can give them a photocopy IF they ask for his birth certificate. Chances are good they will not even ask for it. They won't deny you for that, so no worries about that.
