So I can't use a co-sponsor because I do make enough? I'm at a gross 26k a year that's enough for 3 according to the poverty chart. I'm just bringing her and I was in Philippines for college there I met her. I haven't met her parents but I've talked to them and her kids

With some embassies (apparently Philippines is one), you can't have a co-sponsor for a K1 visa, period. This means if you, as the US petitioner, don't make enough at the time of the interview, the K1 visa won't be granted.

You can find many threads about K1 visa being denied because the petitioner didn't meet the requirement for the I-134, even if they had a co-sponsor who did.

If you make 26K and she does't bring her kids, you should be fine.

Looking grim for me. I need to find employment fast

Well, it would certainly be the safest. But you are probably 6 or 7 months away from your fiancée interview. This should let you a little time to find employment (the sooner the better probably cause it will probably look steadier, but if you don't find a job next week, you'll still be fine, see what I mean?)
