Self-employed require different proof of income?

Timeline

I am a US citizen and I am trying to get a K-1 visa for my girlfriend in Vietnam. After graduating from college and starting a business this year I don't have any tax returns for the past three years, but I do have $20,000 in my bank account and the business is successful with earnings of more than 125% of the poverty level. I have heard that the Vietnam consulate does not allow co-sponsors for a K-1 and I may have difficulty finding one for a spouse visa. I have not registered a business name or opened a business bank account and was planning to just file taxes on the 1040 form at the end of the tax year, but I have heard that quarterly profit and loss statements and bank statements may be important to show proof of income. Should I pay $100 to register as a business, open a business bank account, and keep detailed records to show the consulate or are personal bank statements and earnings on a 1040 form sufficient?

You may need to seek a counsultation with a tax attorney, to help you with your business records, etc.... It is my understanding from other threads that I have read, that self-employed USC have to provide 1099s and other tax/income records. I may be wrong, but that is my suggestion.
