I was just looking over the requirements and documents you should bring along for the interview here My link

It says that the passport has to be valid for 6 months. My fiance just got her passport about two months ago. Does this mean we have to wait until there is 6 months on her passport to schedule an interview. We are expecting our NOA2 by the end of the month

It's the other way around- the passport must have 6 months left on it by interview time, because it must be valid for at least as long as the visa will be valid for, which is usually 6 months.

It means that there must be at least 6 months left before the passport expires. Your fiance's passport is still new so there is still lots of years left before it expires. In short, you have nothing to worry about. Also based on your timeline and the service centre involved, I'm assuming it may take a while before you are called for an interview.

OK thanks guys very confusing use of english. Here is a copy and paste

a. PASSPORT. You must have a passport valid for at least six (6) months. If you do not have one, you

should apply in person at the Department of Foreign Affairs - Office of Consular Affairs (DFA-OCA)

Not very confusing, when you think about it. A passport becomes valid the second it is issued. It is no longer valid when it expires. And MOST countries (to maintain compliance with ICAO regulations) require it to remain valid for 6 months (before it expires) upon completion of travel.

That means it must not expire before your return home, not that it is valid the day you book your trip. For example, you can be denied boarding if you buy a ticket and try to fly on a passport that expires 7 months from today, but you will fly with 6 months left on it, and return home with 4.5 months on it. Some people have made it thru the airport with less than 6 months, but they CAN LEGALLY BE DENIED passage by any airline or Customs agent.
