Is your fiancé the petitioner or the beneficiary?

If the petitioner, they can submit the change of address online here: http://1.usa.gov/HJiJqH

If the beneficiary, they will need to follow the non-citizen steps provided on that same link:

Step 1: File a Form AR-11 (This changes your address in our master database.);

Step 2: If you have a pending case, you must also file a Change of Address online or call our National Customer Service Center at (800) 375-5283. (This changes your address for the specific application you have submitted.)

It would likely depend on where you are in the process.

After you get your NOA2, I would also contact the consulate when they're about to receive your file to make sure that the address has been updated. I was the beneficiary and moved during the process, my fiance updated my address to the USCIS but regardless of all of that, my Packet 3 was still sent to my old address by the consulate. Not a big deal since the Finnish post office is extremely efficient and forwarded it to my new address a day or two later. But still... Don't count on the USCIS to always be on top of these things...
