My wife came to the US on a K1 visa during 2011. We were married in November. We have filed for her AOS and EAD but have not received either. Do we need to obtain a SSN or ITIN in order for us to file a Joint Tax Return? Any help or feedback would be appreciated.

Yes, she needs her SSN to file for taxes. Have you ever tried applying for her SSN? Normally, SSN for K1 can be obtain few weeks after arrival.

After just a few weeks you can get SSN. One trip to SS office and it came about 1 weeks later in the mail.

Looks like nothing special to do even in Turbo Tax for the spouse. But I am fighting now for to get the software to include the child dependent deduction. That part may take a real tax expert and not coverd in TurboTax.
