Ok, so I tried my attempt at making Plantain Foofoo, but instead it turned out more like mashed plantain. LOL It's good but was wondering if you all had any tips or recipes on how to make plantain foofoo?

Fresh plantain fufu:

This recipe is excellent with meat.

Ingredients:

A – 600gr plantain

B – 200gr Cassava

Cooking:

1 – In unsalted boiling water, cook A and B, peeled and sliced for about 15 to 20 minutes.

2 – Remove the pan from the heat, and let them cool down in the cooking liquid.

3 – Drain A and grind until smooth and free of any lumps then add B and mash until smooth.

You can also buy it as a flour in African specialty stores.

This will not be over quickly. You will not enjoy this.

Learned from a Spanish friend that here in the US, cassava is called Yuca. Not sure which state you live in but you might want to try a spanish grocery store or like nigeriaorbust suggested save yourself the stress and buy a box from an African or nigerian food specialty store.

also try Africanfoodtv.com they have tons of recipes on that site..... good luck oh and make sure you have a very strong wooden spoon for the fufu I normally when I go and come back from Naija bring 2 or 3 back with me you can also find good spoons at local African grocery or Asian Market.

Cassava (the root) is also called "Tapioca" in the US and maybe Asia. There's no African food supply where we live, but fortunately there's a lady from Tonga (yeah, the Pacific island) who sells cassava root, plantain, cooking bananas... so we can get good fresh stuff.

Thanks! Where can I find cassava? I know my local grocery stores don't sell it.

which state are u? I know the sore ACRO on Hugh Howell Rd, Tucker, Georgia sells every and anything Nigerian/Afican at good prices.

That's where we buy all our supplies.

2011-01-26: Visas Approved! To be picked up Feb 2nd.

2011-02-01: Got an e-mail stating Visas aint ready for pick-up yet!! Oh God PLSSSSSSS.

2011-02-09: Got a reply to my incenssant e-mails scolding me for writing, and asking me to refrain from writing more letters, and stating officially that am on AP!!!

2011-03-15: Picked up Visas. Oh My God!

2011-03-21: POE, Atlanta Georgia. Find it hard to believe this is truly happening. Thank you God.

NOW IN THE US.

2011-03-28: Received our Social Security Cards in the Mail.

2011-04-08: Received Green Cards.
