I am American, my fiancee is Ukrainian. Do I need to have an interview? Or is it just her?

Usually only the foreigner has the interview.

If there is a serious problem with your case then sometimes the USC will have an interview too.

There's only one original i-129f petition and you sent that to USCIS. It would be a good idea for your fiance to have a complete copy of the petition including NOA1 and NOA2 copies. You keep the original birth cert.

Papers for the interview(affidavit of support, new letter of intent etc.) with your signature need to be originals but I'd advise you to keep copies of those so you have copies of everything submitted to USCIS and embassy in case any of those papers were lost or you have some red flags to overcome or corrections.
