My Fiancee has a travel visa and came from Mexico to the US for 2-3 day visits several times in 2010 then for 2 months in November, 2010, and 4 1/2 months in 2011 to have medical tests and dental work. She had no difficulty through the POE. Will this hurt us in our K1 application?

08/25/2012- Married

09/14/2012 - Mailed AOS package (I-130,I-485,I-765) via USPS Express Mail.

09/17/2012 - Package delivered by USPS.

09/18/2012 - text notification receivefor 765/131 but not 485.

09/22/2012 - NOAs for I-130/ I-765 received in the mail.(not for I-485)

09/27/2012 - Biometrics appt scheduled for 10/04/2012.Had case number for I-485.

09/29/2012- duplicate letter for Biometrics appt.received.

10/10/2012 – Biometrics completed..

11/19/2012 - Case status checked and showed EAD/AP approved/production. No text or letter received.

11/27/2012 - EAD/AP combo card received

This has nothing to do with Canada nor does it have to do with 6 month rule for Canada.

No, the visitation that you mention shouldn't pose you with any problems and actually, helps to show you have a valid relationship. It is important that she not only is a visitor but appears to be a visitor instead of appearing to be 'living' in the US, so she needs to observe the terms of her visas completely and not overstay. US Immigration gets suspicious if someone is spending more time in the US than in their own country, so making sure that she is spending more time at home, and the two of you travelling to visit each other during the process shouldn't be a problem with the K-1 visa. Since Mexican citizens require a visa to visit the US and obtain I-94s when entering which must be surrendered upon exit (http://travel.state.gov/visa/temp/without/without_1260.html ) you can make sure she has copies of her visas and other proof of entry and exit when she does come to the US both to show she has fulfilled proper immigration requirements as well as evidence of your ongoing relationship. When she visits, make copies of the I-94 in her passport. Keep any documentary proof you have of travel to Mexico to visit her - including when you first met her - as well. You may probably never need it but if you do, then you will have it.
