okay so I try my best to cook nice meals here and there but I have gotten to the point where all the stuff I make seems repetitive. Hubby will be home around 5:30 and I want to make something different. This means: no pasta, rice, Afghan food (which is like middle eastern food), noodles. Anyone have any ideas?

Red Peppers w/Herbed Cheese Stuffing

INGREDIENTS

3 red bell peppers, cut crosswise in half, seeds removed

1 ½ cup fresh farmhouse cheese or cottage cheese, drained

2 eggs, beaten

½ cup chopped fresh basil

½ cup chopped fresh cilantro

½ teaspoon salt

½ teaspoon fresh-ground black pepper

1. Preheat the oven to 350 degrees. Lightly oil a baking sheet. Trim each pepper half so it will sit squarely on the baking sheet; do not cut all the way through the skin. Transfer the peppers to the baking sheet.

2. Stir together the cheese, eggs, basil, parsley, salt, and pepper in a bowl. Spoon the filling into the peppers to a level about ½ inch from the top. Bake the peppers, uncovered, for 20 minutes, or until the filling is browned on top. Remove from the oven, carefully transfer with a spatula to a serving platter or individual plates, and serve hot.

Corn & Sweet Potato Chowder

INGREDIENTS

2 tablespoons butter

1 tablespoon olive oil

2 cups chopped onions

2 garlic cloves, minced

1/2 teaspoon ground cumin

1 teaspoon mild paprika

2 1/2 tablespoons unbleached white flour

6 cups low-fat milk

3 corn tortillas, chopped into pieces

2 cups corn kernels (fresh or frozen)

1 large sweet potato, peeled and cubed

salt and freshly-ground black pepper, to taste

Squeeze of lime

2 tablespoons chopped cilantro (optional)

1-2 Jalapenos (diced)

1. Melt the butter with the olive oil over medium heat in a heavy-bottomed soup pot. Add onions, jalapenos, garlic, cumin, and paprika and cook for 5 minutes, stirring frequently.

2. Add flour and whisk constantly for 30 seconds. Slowly add milk, whisking constantly to prevent lumps from forming. Add tortillas and sweet potatoes and simmer over low heat, stirring frequently, for about 20 minutes, until sweet potatoes are tender.

3. Add corn kernels and simmer 2 more minutes. Add salt, pepper, and lime juice, stirring to combine.

4. Serve soup in individual bowls, sprinkled with fresh cilantro.

Spicy Sweet Potatoes

INGREDIENTS

1 1/2 pounds sweet potatoes, peeled and cut into 2-inch chunks

1 tablespoon flaxseed oil

1 teaspoon maple syrup

1/4 teaspoon chili powder, or more, to taste

1/4 teaspoon sea salt

2 tablespoons slivered toasted almonds (optional)

1. Bring a 6 to 8 quart pot of water to a boil and cook the sweet potatoes for about 12 minutes, or until soft.

2. Drain and transfer the sweet potatoes to a large mixing bowl. Add the oil, maple syrup, chili powder, and salt and mash well with a potato masher.

3. Top with toasted almonds, if desired, and serve hot.

Lady, people aren't chocolates. Do you know what they are mostly? Bastards. ####### coated bastards with ####### filling. But I don't find them half as annoying as I find naive bobble-headed optimists who walk around vomiting sunshine.

Hot dayum, that sounds good right about now....

Make sure you're wearing clean knickers. You never know when you'll be run over by a bus.

I use this to marinade fish, seafood and meat all the time. If you like Thai food, give it a try.

Thumb size piece of ginger finely chopped/grated

2 heaped tsp of dried red chilli flakes or more if you like it really spicy

2 tsp sesame seeds

1 tbsp of soy sauce

1/2 tsp unsweetened peanut butter

Juice of half a lemon

1 bay leaf ripped up

Fresh basil chopped up if you have it

A couple of chopped spring onions

Big glug of olive oil

Black pepper - NO salt as you have soy

Mix all together in a bowl and smear over meat and leave to marinade for hours at a time if you like, or 20 mins if you have no time. For fish and seafood leave to sit for about 20mins (if you leave it for longer, it will start to cook itself) and then throw it under a hot grill until cooked.

We eat this with a big green salad.

lol...Gupt ure so funny...while I LOVE take out I like home cooked meals better...

I finally ended up with barely soup and stir fry veggies with tofu...

it's so tough cooking for him because he doesn't favor anything in particular and when I ask him what he thinks of a dinner idea he says: "you know I will eat whatever you cook"

I love the taste of thai stuff!! Good easy meal...

Lou Lou..I use a version of that recipe as well....tis yummy.

I am doing homemade tomato sauce tonight (already started) with fresh basil and thyme from my mini garden!

Should be yummy!
