My fiance has a student visa at the moment F-1, I am a US citizen and we will be getting married in 2 weeks. Is there an issue if she stops going to school at this point or since we already have a date and know we are getting married is it worthless to continue attending there. Also do u know how long it takes approximately for interview?

I'd say that with NOA 1 of your AOS application she is not required to go to school anymore. I'd still finish the fall semester and then she would not have to sign up for classes for the spring semester because she is changing her status.

As far as quitting school, having a wedding date doesn't really matter, and neither does being married. Neither of those give you any status or legal presence. However, the chances that she would get picked up by ICE in the few weeks in between when she quits and when you application is initially accepted are slim. (and it's possible she has a 30-day grace period after her visa is invalidated by her quitting). So if it is really important for her to quit now, I'd say do it. But, why quit mid-semester?
