You have to submit an I-865 Change of Address form. Visit USCIS to send it online. You have to submit this form every time you move until your mom becomes a U.S. citizen or until she has worked in the US (and contributed to Social Security) for 10 years.

Petitioners have to submit an I-865 Change of Address form within 30 days of moving to their new address. So do it immediately.

Should i do it now or should i wait until she arrives here?

If you are the petitioner (sponsor) and your mom is immigrant, who will be receiving the visa, you can not “sponsored my mom as a US citizen” if you as the sponsor have relocate recently then you will need to fill out I-865, sponsor’s Notice of Change address and submit your form by mail, where the notice should be sent depends on where you live. Your mom may not need to submit a change of address at this time she's not in the U.S. But when and if, she needs this form AR-11 it can be done online for the immigrant only.
