your list looks very good and solid. Make sure that the bank statements, and other bills show a span of two years.. you did mention 3 months but the last 3 months will probably cause the reviewing officer to scratch his beard and wonder if he should send you an RFE requesting more....

What is recommended is to send in a copy every 3,4 or 6 months to show that you had both names on the accounts the entire duration and not only the last 3 months....

Leave out the tattoos, as they are only one step below the pierced very personal body parts on the low-life scale, and add a paragraph or two to the top of your cover letter explaining who you guys really are. Other than that I give you both thumbs up.
