I have filed for my AOS and have received email notification that they have received the documents etc. I even received a paper notice. (I think this is the I-797.)

Will I get any more confirmation from INS right away? I need to get my Driver License and the DMV is complaining that my visa validity is only for the K1 period, and so I can't get it. What I want to know is, will I get a document from the INS saying that I am allowed to stay in the country beyond my K1 validity, so that I can show that document at the DMV?

You will get an Employment Authorization card that will be valid for one year, which will likely get you a 1 year driver's license (depending on your state). You will get a green card that will allow you to get a permanent license. If you are in Texas, then we've been there/done that and I'm certain there's no other way to get a license when you are a K1 until you have EAD.

No. Just like here in Illinois, you have to wait to get your Green Card to obtain a DL.
