I know I don't need it for a while but I want to start planning now:

I am just confirming from what I have read. For a k-1 AOS.

1. I will file a i-864 for my then fiance, now husband with a co-sponser (my dad, we live in the same house) so he will file the i-864a? is the correct?

2. Also my dad joint files with my mom, so if we get the tax transcripts from the IRS and suppliment with his w-2s to show his indivisual income, we don't have to worry about having my mom file anything?

Thanks! :)

That is correct, you file the 864 as you are the primary sponsor, your father files the 864a since you are living in the same house (otherwise it would just be another 864)... You need to provide taxes (or transcripts) w2/paystubs, letter of employment and since your father is living the household and filing an 864a, you have to provide not just the proof of status in America (copy of passport, birth certificate, LPR/Green cars) but you must provide proof of relatonship (like your birth certificate with him listed... etc..)

There have been a few cases of late where the consulate has also asked for an 864a from the spouse of the co-sponsor, so if you really wanted to cover all bases you can have her fill that out just to show that she is aware that her husband has financially obligated them...

This would be for an AOS once in the USA from a K-1 so it would be a center here not consulate. I might have my mom fill out the paper work just to be on the safe side- if we have to use it we do, if not I will just use my dad.

Thanks!
