I'm helping my husband fill out his forms now so that we can mail them in in January. The thing is, he's leaving soon to go abroad, and won't be back until after we want to mail this in. I don't think this is a problem in general (right?), but am not sure what to write for part 7, as he won't have a date of entry back into the US.. any ideas? Thanks!

Does he have an anticipated date of return? Another VJer was visiting her family overseas and arranged for a friend to put her citizenship application in the mail 2 weeks before she returned. She figured that was a safe amount of time to allow for the NOA to arrive and not miss a biometrics appointment. She filled in the date she would be returning to the US and sent it in with the application even though the application would have been received before she returned. Perhaps that is something you can consider - put the expected date of return where it asks about time out of the country and then not mail it off until 2 weeks before that date so he will be back in time to do the biometrics appointment.
