Regarding the AOS package:

I have read on this website to include an employment letter with the AOS package. If I were to submit my pay checks, would that be sufficient evidence to prove I have my job? I really do not want to wait for the employment letter to be completed, I been waiting for it for two weeks now, and I am at the stage where I could just send in my AOS package.

Your help is appreciated.

I had three jobs and did not submit any employment letters. I submitted about 6 months of paystubs which was probably overkill. The letters are optional.

The first time around, I only sent the I-864 along with an employment letter and copies of my w-2's from the previous tax year. This wasn't enough as I received a request for more evidence.

After reading through VJ more thoroughly, I noticed I needed to send tax transcripts. I requested tax transcripts from the previous year and resent to the nvc another I-864, employment letter, the tax transcripts, and original paystubs for the last month. It was then accepted as sufficient about 2 weeks later.
