PECAN FINGERS

Ingredients:

3/4 cup shortening (half butter or margarine, softened)

3/4 cup confectioners' sugar

1 1/2 cups all purpose flour *

2 eggs

1 cup brown sugar (packed)

2 tablespoons flour

1/2 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon vanilla

1 cup chopped pecans

Heat oven to 350 degrees. Cream shortening and confectioners' sugar. Blend in 1 1/2 cups flour. Press evenly in bottom of ungreased baking pan, 13x9x2 inches. Bake 12 to 15 minutes.

VARIATIONCoconut Chews: Substitute 1/2 cup chopped walnuts and 1/2 cup flaked coconut for pecans. While warm, spread with Orange-Lemon Icing: Mix 1 1/2 cups confectioners' sugar, 2 tablespoons butter or margarine, melted, 3 tablespoons orange juice and 1 teaspoon lemon juice until smooth and of spreading consistency.

Hi, everyone!

I have been looking around VJ for different kinds of recipes. I have followed threads about people's favorite native dish or what dish they miss, but nothing dedicated to sharing tried and tested recipes.

Let's share recipes, whether it's something personally created or one that's been handed down through the generations, not something you found online and copied just for the sake of posting here. Please don't post links, that's what Google is for. The point is, it has to be something you have cooked, tried and tested yourself.

Also include your cooking tips so even a novice can recreate the dish. Take for instance, Adobo (probably the easiest and tastiest Filipino dish around), but people have their own versions of how to cook it. So share what makes yours unique.

Disclaimer: I have not seen or found an existing topic like this in the Philippine regional discussion board. If there is an existing one, can someone post me the link please?

I've been thinking to post this kind of topic too since I am not good in cooking. Though there are lots of recipes you can find in the in the net but my problem is there is no feedback so I would not know if it is good or do people like it. So this is much better because this is based on personal experience with no fancy ingredients yet delicious. thank you for sharing your recipes.

Hi neenuh.

My boss did. He kicked it up a notch by putting red wine in it to help improve the taste of the lamb.

i was thinking of using lamb for kaldereta... has anyone tried that?

Timeline

I had this in Teriyaki Boy months ago. I liked it so I tried it at home...yummy appetizer.

Veggy Kakiage

Ingredients:

1 Carrot

1 (White) Onion

1 Sweet potato

Batter:

2:3:1 cup ratio Flour:Cornstarch:Iced Cold Water

1 Egg

Dip:

1 tbsp teriyaki/noodle sauce or soy sauce

2 tbsp vinegar

1 tsp honey

1 chili red pepper

1. Slice onion, carrot, and sweet potato into thin stripes (1 1/2 inch length)

2. Mix the flour, constarch, ice cold water and egg. Do not over mix. The lumpy parts will make it more crunchy.

(Use the batter as soon as possible. Do not prepare the batter before slicing the veggies.)

3. Heat the oil in a frying pan.

4. Coat the mixed veggies with batter just enough to make it stick together.

5. Fry until golden brown.

6. Drain fried veggies.

7. Serve hot with dipping sauce.

I have not tried lamb in kaldereta, but my experience was that it needed marinating to taste good. Like the wine suggested by marriedtomrg.
