I filled out the G325 with my fiance, but, we only did one page figuring that I would just copy it three times...

Have I made a mistake in doing so? Do I need her original signature on each of the four copies or will a photo copy of the page we filled out do the job?

Second question...

My fiance will need to return to her country about 4 months after arriving in the US.. how do I get this set up so we do not have problems later?

You each need to complete a G325a, not G325. If you're filling it out in a current version of Adobe, then pages 2-4 will be automatically filled in, however there still needs to be an original signature on all four pages, otherwise the forms are incomplete.

Your second question is rather vague, but I'm assuming that you're asking about the beneficiary leaving the US after you marry. Please read the guide for Adjustment of Status. The short answer is that your fiance will apply for Advanced Parole (AP) at the same time as they apply for their EAD and AOS. They cannot leave the US and be readmitted without the AP.
