Travelling to the States before K1 interview

Hi, I know this is an old topic but I would appreciate your contribution. i am in the middle of K1 process. right now I am preparing documentation for my interview in Peru which I had to postpone because I am going to the states for 2 weeks on my tourist visa. Yes, I am going for 2 weeks to see my love and then i will come back to Peru to finish my work contract and after that, in the beginning of July I will go to the states to get married (....FINALLY.......!!!!)

As I could see, there is no legal impediment to travel to the states while I have my tourist visa, I am also going to take the letter with my interview date, I have a return ticket, and so I can prove that I will be back.

I think that some time ago I saw a link with the law that says that immigrations can not deny you to enter to the country while I am in the middle of a K1 visa if i prove that i am returning to my country.

does somebody has some experience with this, can give me some recomendations or now where I can find this law?

From what i understand, a round trip ticket is no longer good enough evidence alone due to the fact that round trips can be cheaper than one ways so i was told to take a copy of a mortage payment and DEFINATELY a letter from your employer stating when they expect you back at work. That should be good enough! Although you are not doing anything illegal, i heard that it can all come down to the officer you get at the POE. Just be honest and I'm sure everything will be ok. I plan to do the same thing in a couple of months.
