Good day! I would like to ask something. Every week I checked my visa application status at ceac after we paid all fees, sent DS 260 and AOS, financial and supporting documents 11 weeks ago ( status was " Action Required: Send necessary documents" for the whole duration of 11 weeks).. Just now, i checked again and it went back to "At NVC". I did not receive any email from NVC. What should I do? Is it okay? Thank you for your responses...

Should I wait for the email from NVC regarding acknowledgement that they have processed my application and for the upcoming interview?

Yes, you'll receive one mail, that your case has been completed and you are awaiting  your interview till it'll be scheduled and 2nd mail informing, that your interview is already scheduled.

If 11 weeks already passed when you have submitted your docs and you haven't received CC letter, you can call NVC and ask about your case status.
