Ok. Yes. In the website of the embassy you can find which is the accepted doctor (https://cl.usembassy.gov/es/visas-es/immigrant-visas-es/instrucciones-de-examen-medico/) you need the appointment for 2 weeks before the interview, because they ask for exams. Have in mind that the K1 visa medical exam papers are not digital. (The doctor should know this and have the papers to fill)

Did you have to getting any pre-authorization from the police in Chile before you exit the country? My fiancee's flight is coming up this week and apparently they said the K1 visa isn't enough for her to exit the country. Any suggestions? Thanks.

The reason to leave the country is not return. And you have to show the visa and one way flight. That should be enough.
