I wasn't there but asked my fiancee for details.
Document intake -
This went pretty smooth. They asked her to take the covers off the birth, unmarried, and police certificates. They asked her to affix her passport photo to the DS 156. She got there 2 hours early and so got a low number for interviewing the next day.
Interview -
Lasted 5 minutes. I thought it was interesting the interviewer was an American woman but she conducted the interview in Chinese. They only asked to see our photos, and said they were cute. Didn't ask to see any financial documents which surprised me. They asked how we met. They asked my fiancee some questions about her education because she has a master's degree. She was out by 9 30 am with approval!

Here are some details and hopefully some tips of our experience:
Document Intake:
We arrived at 10:00am although we were supposed to show up at 12:30pm. We were first in line (stay all the way to the far left, the lines to the right are for people that have missing documents, non-immigration, etc). The single line became 3 lines as more people started coming. They let us in about 12:20pm and we entered the building, headed left, and went up an escalator a few times. I was stopped since I had a US passport. My wife (already has a greencard) was allowed to accompany our 10 year old daughter. They got a number and sat down and were called around 1pm and they were the first number called. She was with the visa officer for about 10 minutes, they were primarily interested in my tax returns and income information. She sat down and waited for fingerprints. Around 1:30, her number was called and they instructed her that children do not need their fingerprints take... read complete review

my fiance waited for several hours on Interview Day and it was hot as hell in Guangzhou; but it was worth it - her interview took less than 2 minutes

No problems at all. The interviewer was very cordial and only asked 3 questions:
1. How many times have we met in person?
2. Have I met his parents?
3. To tell the interviewer something about him (what he does for a living, what he likes to do as a hobby, etc).
The only materials reviewed were some photos brought in a photo album. The entire interview lasted less than 5 minutes. No worries!
