The circumstances of your engagement were the same as mine. By the time my now-husband proposed, we already spoke countlessly about getting married. He didn't have a ring for me either, we didn't even think about it until a day or 2 before I was due to leave. Even when I had an engagement ring, we didn't include anything about it in our petition because an engagement doesn't require a ring, only a question and an answer between the couple. 

Any evidence provided as indicative of a planned wedding may be misconstrued as you having already been married.  Don't do this.  As JM says, each party should submit a letter of intent to marry, detailing their understanding of the relationship and the desire to marry.  Please sign both letters, and write them independent of one another.  Nothing else is needed for this, and as stated, anything additional may work against you.

Written letters of intent to marry within 90 days are the normal evidence provided for this.  One from each of you, signed.  Search this site and google for fiancé letter of intent to see examples.  Having a date selected this early is optimistic, since processing times can vary significantly.  It is not generally expected to have a date chosen.

it doesn't mean have you been together for at least 2 years
it just means have you met in person within the last 2 years of the date you filed the petition
 
so if you filed the petition on april 26 2025, you would have had to have met in person at least once sometime between april 27th 2023 and april 26th 2025.
if you have, than you answer yes

1) There's no form 1-29F. I think you mean I-129F
2) It just asks whether you met in the last 2 years in person. It could be yesterday. No problem, you don't need to wait 2 years before filing.
