Thank you Geowrian and Greenbaum for answering my question and I'll definitely  check out the sub forum dealing specifically with the philippines.

She can leave at any time...the issue is getting back in. The K-1 visa is single-use, so that's no longer valid after the first POE.
 
She can re-enter the US with Advance Parole (AP) or a green card. AP can be filed alongside AOS (it's no extra cost!). ETA: ~4-7 months from filing to approval.

If she has a Green Card then she can travel out of the country but she needs to not be out for any length of time or they will view that as abandoning her status. So most here recommend no longer then 3 months is ideally the yardstick to use.
