My husband brought photocopies of all supporting docs for the joint sponsor's I-864 to his interview last week and had no issues (we received the visa and this was never brought up as an issue).
However, we did have originals of the signature page for the joint sponsor's I-864. It would be a good idea to get this, if you can.

I went through this exact process in London. In fact, I had married prior to withdrawing the I-129F application. Once I was married, I wrote a letter to withdraw the fiance visa application, which had already been approved, and subsequently filed the I-130 via DCF.
There were no issues to note - good luck!!

Thank you all so much. This is truly the best advice I have received and helps so much! I feel like a bit of a fool for being ignorant to DCF, but glad you guys were able to help.
I will look in the DCF forums to see about sponsors on the Affidavit of Support, as I will certainly need one.
