bear in mind that the sub-humans answering the phone at NVC are SERCO contractors, and it's a mix between:
    1. poorly trained and
    2. making stuff up to get you off the phone.
i take the 'consensus' approach - asking the same question across a 2 week period, carefully keeping track of the answers.

You should have kept a copy of what you submitted TO the IRS - I expect you have this and are simply confused about what they are asking for. If, for some reason, you DID NOT copy your return, I would suggest simply filling out (and signing) another one for submission to the consulate.
As of April 15, copies of the 2014 return are usually REQUIRED at the interview - your visa can be delayed for this.
I believe the IRS also expects that you keep copies of what you submitted - there should not be a problem here.

I detailed my entire experience here: http://www.visajourney.com/forums/topic/327561-my-ep-experience/
It was different when I was doing it; however, I was able to insert updates as the process has changed.

Do you have any other qualifying dependents living in your home for more than half the year in 2014 and your spouse did not live with you in your home for the last six months of 2014? If the answer to both of these questions is 'yes', then you may qualify for filing as Head of Household.
Otherwise, you're only choices are MFJ or MFS.
Phase-out limits for student loan interest are quite low; that's just a fact you'll have to deal with when having a higher income. However, phase-out limits for other deductions are significantly higher - so you should still be able to take advantage of mortgage interest, state and local taxes paid, charitable donations, etc. Yes, MFS does limit your deductions quite significantly; this is why it's not the preferable choice in most situations.
If you are eligible for tax-advantaged IRA contributions, you still have until April 15th to make contributions for the 2014 tax year and this may help reduce your tax liability.

Have you got the hard copy of the NOA2 in the mail? The letter is the official notice. It should say case is approved and sent to nvc for processing

That first E-mail you got is strange. I have never heard of that before. It seems like it was just a an error, since you got the second e-mail saying your petition was sent to nvc for processing which is normal. you could try to call the NVC, but they probably do not have your case yet or have a case number assign
Also you should receive the hard copy soon of the NOA2
