According to the Dec. 6th announcement, doc intake will only be scheduled Mon-Thur, and interviews will only take place Tues-Fri. Can't find the link just now but I have the printed doc in front of me.

Incorrect. They only need a co-sponsor if the current income isn't sufficient. If she wasn't legally required to file taxes then they won't care as long as her CURRENT income is sufficient. Three years info IS required, but if you weren't required to file taxes you simply put "0" on the i-864 and write a letter explaining you didn't earn enough to file taxes.

You did it right, if your wife is the immigrant then you don't count her again as your spouse.
By the by, I recently got a checklist for listing myself as employed as a student, instead of checking "unemployed." Thought I'd mention it as I think you're in a similar situation.
