How long can we delay NVC? Plus I-864 question

Hi,

My wife and I received our letter from the NVC saying that our petition has been approved and that they now require documents for our case.

We're currently living in New Zealand (where I'm from) and with our current employment/life situation in NZ and everything going on with covid, we'd like to stick around here a while longer until the second quarter of 2022. The process from here is obviously still pretty long, but we want to ensure that we don't have move earlier than we'd like to if our case moves quickly, so we were wondering if there's any limit on how long we delay sending in our documents to the NVC before it becomes a problem. Are we able to just wait another 6 months before doing anything and our application will just carry on as normal?

To follow on from that, my wife and I have been living in NZ for a little over a year, and before that Canada for 2 years. She earns well over the I-864 required income and has filed her US taxes on her NZ and Canadian income, however because she's been earning overseas none of the income is "US income". I just wanted to confirm that because of this, she does not meet the requirements for the I-864 and we'll have to find a co-sponsor as well?

Interview done & approved. At what point should I start inquiring...

I had my citizenship interview done on 06th of January, 2021. The interview went well and the interviewing officer handed me the form N-652 with the box checked for "Congratulations your application is recommended for approval".

It has been more than two and a half weeks since then with no movement forward.

At this point I am still not particularly worried or concerned at the lapse of these two and a half weeks. I gather that the USCIS has 120 days from the date of the interview to issue a final decision.

But how long should I wait before I start making some inquiries?

And if I do reach such a point - who should I specifically be talking to or what is the best way/method to find out what is happening with my application?

Any insights are deeply appreciated. Thank you.
