My wife and I called USCIS tonight and were redirected to a very nice immigration officer that said he notified their technician who would enter us in the online system, we should be in there in 2 days.

To get there just follow the prompts for an RFE but don't choose the option that says you already have a receipt number, wait and an option will be given to you that says you lost your receipt number. It'll connect you to a real person that will redirect you to an immigration officer.

Coincidentally when we checked the mailbox our notice for her AOS interview was in there

That of course was after I spent 25 minutes on hold, but we are happy nontheless.

For all those that already have had their paper noa's for a while also I'd just recommend calling them and getting it straightened out.
