I'd be afraid to do that, if you make a mistake with it you could go blind or die

If you let air get to it while it ferments, you're essentially producing vinegar. Or if you don't take it off the stuff the yeast produces (you know, the funy stuff that sets at the bottom during fermentation) every so often, it gets this dirty socks like taste.
