I filed my AOS packet a few months ago, my I-130 is approved but I got an RFE on the I-485 because I uploaded the birth registration instead of the birth certificate. 

 

I did get a new birth certificate from my local government, but I noticed my fathers name does not exactly match between my passport and my birth certificate.

 

Essentially he has a "kumar" appended at the end of his first name in my birth cert. So its "FirstNameKumar LastName" on my birth cert and "FirstName LastName" on my passport and other documents. This is mostly a cultural thing and can be considered an honorific. I have a similar issue with my Mom's name.

 

The rest of the information matches. I'm wondering if I should just upload this as is because its a minor thing or try to explain it with an affidavit from my Parents ?

If they are asking for your birth certificate, there is no substitute document.  The mismatch is what it is.  What is the actual explanation anyone could give?
