When my father filed a petition for me (unmarried son of a US citizen) I dont have a child yet. When I receive a letter confirming the petition (its the letter with the priority date), at that time i still dont have a child yet.

 a few months after i receive the letter my girlfriend got pregnant and we had a child.

 

My question is, is this going to affect the category im in? Im a bit concerned. Also, should i update NVC or USCIS that i have a child?

The fact that you have a child from a 'girlfriend ' doesn't affect your case negatively at all. You have the option to add in your child as derivative under your case ones your case is approved and ready for further processing at NVC. However, keep in mind that any change in your marriage status from single to married would significantly and perhaps negatively affect your entire case. 

When is your priority date and which country?
