My fiance is Palestinian, and we want him to come to America so we can get married. I plan on moving to Palestine with him in the near future, so he's not coming as an immigrant. Does anyone know how difficult this process will be for us? Thanks so much for any imput.

Depends on what you apply for...like the K1 is for a fiancé, a K3 is for a spouse. You could ask this question, as far as the difficulty of it all, on the MENA Forum as there are many with fiancés from that area. If he comes on a K1 it is a non immigrant visa, but it requires one to marry in 90 days. After that is the filing of AOS - Adjustment of Status to that of being a Permanent Resident.
