Hello my fiance is currently 4 months pregnant we just recently started her k1 visa documents. I am a US citizen and she is a Cambodian citizen. We currently live in Phnom Penh and are a bit worried on the process for the baby. Have any of you dealt with any of these issues. What kind of proof do we need to ensure the baby receives US citizenship.

This page should have the details you need

note: baby either is, or isn’t, a USC at birth.   (In other words yiu can’t do anything now to “ensure” the baby “receives” citizenship.) If baby is a USC, this page lists how you determine it and what you need to prove it.
