Many K-1 Visa couples elope or do a courthouse wedding right after POE, and then a regular “wedding” later.

Yeah, dont.    You do that and your K1 will be flat denied. Horrible plan. You made a mistake and will probably lose money but that's still better than having a visa denied and then waiting

I do hope it all works out for you. It did for us. We had an idea of a wedding date and it was roughly 10 months from start to us getting married.
