I'm wondering what date shows up on the EAD card? So if the USCIS case status website informed us on the 3rd card production was ordered, would the date be the 3rd? Or is it some later date?

The date on the card is the date the EAD is approved.

Correct, and you can legally work as soon as EAD is approved, regardless of whether you have the card yet.

Good news. There was no break in Rey's work authorization at all then. Neat!
